4 Classic Method Sparkling Wines that enclose the magnificence of the territory

14 years ago we wanted to challenge ourselves by starting to produce Classic Method Sparkling Wines in a territory that has bewitched us, captured and then supported us giving a complex but winning production with the most emblematic bottles of our production.

Etna can boast of a sparkling production that, together with a few other world realities, focuses mainly on native vines. Our passion and desire to put ourselves to the test led us to start the history of our winery with a sparkling wine production. Our first vines of Nerello Mascalese, quite difficult to cultivate, are the heart of Rosè Brut. It has, on the volcano, a Nordic style with an aromatic profile but Mediterranean, thus enjoying an absolute “unicum”.

This is how our sparkling wines are born, softly refined. Elegant in their hints of fruits typical of the terroir, a good body and a pleasant closure.

Classic method for bubbles that enhance the terroir of Etna

Why Metodo Classico? Because we want to follow the path of quality and tradition. Our international grape varieties give rise to four Metodo Classico sparkling wines, two that remain 36 months on the lees and two that remain 50 months: the Blanc Brut, a blanc de blanc from Chardonnay grapes, and the Rosé Brut, a blend of Pinot Noir and indigenous Nerello Mascalese
Our sparkling wines are therefore produced according to tradition with the use of selected yeasts and cane sugar. The bottles are left to rest and are periodically turned on the pupitres by applying the so-called remuage, followed by dégorgement by hand. Finally, they are matured for at least 1 month in the bottle before being sold.

36 or 50 months on the lees

The 36 months mark the period of maturation of the sparkling wine. Protected from light, sparkling wine develops new aromas becoming an example of the magnificence of the territory of origin in all its freshness.
